Description
White sausage, Weisswurst in German or Boudin Blanc in French, is a classic cooked emulsified sausage, with a delicate, fine texture. It can be made from a variety of meats, and in this version we make it with Warthog which has got a similar consistency to pork, only leaner. It is very juicy, with a pleasing lemon zest and fresh herb flavours. The big difference between ours and the commercial sausage is that we only use good quality veld raised meat cuts and herbs, no preservatives, fillers or meat by-products, thus making them a perfect healthy snack for young children.
